Southwestern Cavatappi

  • 1 pound Ground Beef (95 Percent Lean)
  • 1 jar (16 ounce) TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
  • 1 Medium Zucchini, Chopped
  • 1 teaspoon Chili Powder
  • 3 cups Cavatappi Pasta Or Any Corkscrew Noodles
  • 1 can (11 ounce) No-salt-added Whole Kernel Corn, Drained
  • 1 cup KRAFT 2 Percent Milk Shredded Reduced Fat Cheddar Cheese, Divided
  • 1 tablespoon Lime Juice
  • 1/4 cup Chopped Cilantro
  • BROWN meat in large skillet sprayed with cooking spray on medium-high heat, stirring frequently; drain. Add salsa, zucchini and chili powder; mix well. Reduce heat to low; simmer 10 minutes, stirring occasionally. Meanwhile, cook pasta as directed on package.

    ADD corn and 1/2 cup of the cheese to the meat mixture; cook 3 minutes or until cheese is melted, stirring frequently.

    DRAIN pasta; place in large bowl. Add meat mixture, lime juice and cilantro; mix lightly. Sprinkle with remaining 1/2 cup cheese. Serve with lime wedges, if desired.


    Jazz It Up

    For a spicier flavor, add 1 Tbsp. mashed chipotle peppers in adobo sauce with the salsa.
